Il Brunello di Montalcino ''Santa Restituta'' Gaja prende il nome dalla piccola chiesa di Santa Restituta, che ha le sue origini nel lontano quarto secolo. Nasce con la vendemmia del 2005, quando per la prima volta nella sua storia, la famiglia Gaja ha iniziato la produzione di Brunello di Montalcino. Senza la denominazione del singolo vigneto questo vino è l'unione dei principali vigneti della tenuta di Sugarille, Santo Pietro, Castagno e Pian dei Cerri. Dodici mesi in barrique (botti di prima, seconda e terza passata) e 12 mesi in botti (grandi botti trentennali) ne scandiscono l'affinamento.
